8 chicken thighs, boned
¼ tsp. ground ginger
¼ tsp. pepper
3 T. salad oil
1 bunch fresh broccoli, sliced thin crossways
1 c. sliced green onion, green included
¾ c. plus 2 T. chicken broth, divided
1 tsp.salt
1 T. cornstarch mixed with ¼ c. soy sauce
¼ c. grated parmesan cheese

Do all the cutting ahead of time. Chop chicken into bite-size pieces. Sprinkle ginger and pepper over the chicken. In a large fry pan or wok, pour oil and heat to high temp. Add chicken, and stir-fry 3 minutes or until brown. Push chicken to the side, and add broccoli and onions. Stir-fry 3 minutes more. Mix together ¾ c. broth, and salt, and stir into pan. Reduce heat to medium high. Cover and cook 2 minutes. Add the cornstarch/ soy sauce mixture to the remaining 2 T. chicken broth. Stir until smooth. Stir into the fry pan, and cook for 1 minute. Remove from heat. Stir in cheese. Sprinkle with croutons and serve.
