1½ cubes butter
4½ c. chopped onion
3 c. chopped celery
1½ lbs. mild pork sausage
1½ c. coarsely chopped mushrooms
½ T. salt
1 tsp. pepper
1 tsp. sage
1 tsp. thyme
1 tsp. rosemary
1 tsp. nutmeg
2 tsp. poultry seasoning
18 c. unseasoned coarse bread crumbs
4 c. homemade corn bread crumbs
1⅓ c. Toscana French Bread crumbs
1 can (14.5oz) chicken broth
2 large eggs, slightly beaten

This will need to be made the day before Thanksgiving!
Sauté the onion, celery, and mushrooms in butter until tender. Set aside. Cook the sausage in the same pan, and drain the grease off. Butter a very large baking dish with a lid (or may use roasting pan with lid.) Butter the bottom of the baking dish/roasting pan. Place the sautéed vegetables and cooked sausage in the pan. Add the salt, pepper, sage, thyme, rosemary, nutmeg, poultry seasoning, coarse bread crumbs, corn bread crumbs,chicken broth, and slightly beaten eggs. Mix all ingredients together well. Put in a 325º oven, covered for 1 hour, then for ½ hour uncovered. Then remove from oven, stir in the Toscano French Bread crumbs. Turn oven down to 250º, and bake covered ½ hour more.

When we were young, Mom made 2 types of turkey stuffing - this one with meat, mushrooms, and some cornbread as well as traditional bread crumbs. The other was the traditional - just celery, onion, and bread crumbs. She and I preferred this one with the sausage. Dad liked the other. Mark, and Bob didn’t care, and Pete didn’t like either. Eventually, Mom just made the more traditional stuffing. I was excited when I found this recipe.
