Ingredients:
Ingredients:
2 lbs. skinless, boneless chicken thighs
¾ cup buttermilk
2 tbsp. olive oil, divided into 1 tbsp. each
2 cloves garlic, minced
2-1/2 tsp. salt
1-1/2 tsp. paprika
½ tsp. ground black pepper
1-1/4 cups panko bread crumbs
1/3 cup all-purpose flour
½ tsp. chili powder
Vegetable oil cooking spray

Directions:
Directions:
In a large bowl, whisk together the buttermilk, t tablespoon olive oil, garlic, 2 teaspoons salt, ½ teaspoon paprika, and the black pepper. Place the chicken thighs in the marinade, cover, and refrigerate for at least 30 minutes or as long as overnight. Preheat the oven to 425 degrees, spray a rimmed baking sheet with vegetable oil and then set aside. In a large bowl, combine the panko, flour, ½ teaspoon salt, 2 teaspoons paprika, and chili powder. Working one at a time, pick up each piece of chicken, letting any excess buttermilk drip off, and press into the panko mixture, coating both sides. Place on the baking sheet. Before sliding into the oven, drizzle the remaining tablespoon of olive oil over the breaded chicken pieces. Bake the chicken for 45-50 minutes or until the internal temperature reaches 165 degrees.
