1 pt. cherry tomatoes, stemmed
1 onion, peeled and chopped
1 lb. dried black beans, soaked overnight
6 cups water
1 lb. boneless ham, cut into ¾ inch cubes
¾ lb. smoked sausage, cut into ¾ inch pieces
6 cloves garlic, peeled and minced
1/8 tsp. orange zest
¾ lb. hot Italian sausage, cut into 1 inch slices

Preheat oven to 350 degrees. In a large Dutch oven, combine all ingredients. Bring to a boil; skim if necessary. Cover and transfer to oven. Bake 1-1/2 hours. Remove cover and bake another 30 minutes stirring occasionally. Serve with corn bread and “Hoppin John”. Make quite a lot.
