1 1/2 cup vegetable oil
1 cup brown sugar
1 cup white sugar
3 eggs
2 tsp vanilla
2 cups flour
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
1 small can crushed pineapple
2 cups grated carrots
2 cups chopped pecans

Icing:
8oz package cream cheese (room temperature)
1/2 stick butter
1 cup brown sugar
1 tsp vanilla

Directions:

1. Preheat oven to 350*
2. Cream sugar, oil and eggs together
3. Mix dry ingredients together,
4. Mix dry ingredients with wet. Stir in pineapple, nuts and carrots.
5. Pour in to a 9 x 13 pan, ungreased
6. Bake for 35-50 minutes
7. In a separate bowl, mix cream cheese, sugar, butter and vanilla until smooth.
8. Allow cake to cool before spreading icing
