2 ⅔ cups bread flour
2 cups lukewarm water
1¼ tsp. instant yeast
1 tsp. honey

4 cups bread flour
2 tsps. unsalted butter
1¼ cups water
1 cup plus 2 tbsp. starter
2¼ cups yeast
1 tbsp. sugar
1 tbsp. salt

Directions:
Directions:
Make starter by mixing together bread flour, water, instant yeast and honey. Cover and let sit for 12-24 hours. Work 2 tsp. unsalted butter well into 4 cups bread flour. Add water, starter, yeast, sugar and salt and mix until smooth and elastic. Cover and let rise one hour. On floured surface, roll out dough ½" thick. Cut with cookie cutter and place on parchment paper on cookie tray sprinkled with corn meal. Let rise 20 minutes. Lightly grease griddle pan, cook each side 2 minutes. Place on cookie sheet and cook in 400ºF oven.
