4 oz sliced pork strips
1 tbsp garlic fine diced
2 whole garlic cloves, crushed with a knife blade
4 oz beer
1 tbsp dijon type mustard
1/2 tsp piri piri or Tabasco
1 bay leaf
1 tbsp olive oil (or coconut oil)
1 tbsp butter
4 oz pickled vegetables
1/2 tsp paprika
Salt

Put the beef strip into a bowl with the beer, Dijon mustard, some of garlic, piri piri, a good pinch of salt and bay leaf. Mix all together well. Let rest for about 10-15 minutes. There is no need to refrigerate during this time. On high heat add to a wide frying pan, the butter, olive oil, paprika and the smashed whole garlic. Let it fry until the garlic is starting to get a color. Take the pork strips, out of the wine sauce, (don't worry too much if the meat has some of the sauce) and add to the frying pan. Let it fry until the meat is cooked to your liking (well done, medium, rare) and stir every so often. Remove the meat to a plate. Add the beer sauce to the frying pan with another pinch of salt and a little or lot of chili powder. Let this boil/fry for about 10-15 minutes to reduce the liquid a bit. Stir every so often. Add the pork to the frying pan with the beer sauce, just to incorporate, then add the picked vegetable to warm them. Serve on a platter/dish.

Literally translating into "woodpecker," pica pau is a Portuguese snack usually enjoyed with a round of cold beers and some bread for dipping. Perfect after hiking a half dozen miles touring the magnificent sites of Portugal.
