1 lb lean ground beef
2 tbsp butter
1 small yellow onion (diced)
1 small green bell pepper (diced)
8 oz brown mushrooms (minced)
2 tbsp ketchup
1 tbsp Worcestershire sauce
½ tsp Kosher salt
½ tsp black pepper (can be fresh ground)
1 tbsp cornstarch
1 c. beef broth
8 oz Provolone Cheese slices (chopped)
6 hamburger buns (Brioche holds up well)

Directions:
Directions:
1. Add ground beef to a large skillet and brown until a deep brown crust appears before breaking it apart. (a cast iron
skillet works very well here)
2. Sir ground beef and brown until a deep crust appears on about 50 or so percent of the beef.
3. Remove the beef (you can leave the fat because there won't be much) and add butter, onions, bell pepper, and
mushrooms.
4.Let brown for 1-2 minutes before stirring, then let brown for another 1-2 minutes before stirring again.
5. Add beef back into the skillet.
6. In a small cup mix beef broth and cornstarch together.
7. Add ketchup, Worcestershire sauce, salt, black pepper, beef/cornstarch mixture to skillet.
8. Cook until mixture is only slightly liquidy (about 75% of mixture is above liquid.), 3-5 minutes.
9. Turn off heat, add provolone cheese.
10. Serve on toasted buns.
