1 box white cake mix
1 (11 oz) can mandarin oranges, not drained
3 egg whites
½ cup vegetable oil
Frosting:
1 tub (9 oz) Cool Whip
15¼ oz can crushed pineapple
1 small box instant vanilla pudding
1 cup coconut

Directions:
Directions:
1. Beat together cake mix, oranges, egg whites and oil for 2 minutes.
2. Pout into greased cake pans of your choice: round layers or 9x13 rectangle.
3. Bake at 350º for 20-30 minutes (for layers). Add minutes if you use 9x13 pan. Bake till center is set.
4. Let cake cool completely before frosting.
Frosting:
1. Mix pudding mix gently into Cool Whip.
2. Stir in un-drained pineapple and coconut. Let this set up for a while till thickened. Frost cake.
3. Chill thoroughly before serving. This recipe keeps well for several days.
