1 - 2 to 3 pound spaghetti squash
1/4 c. soy sauce
3 cloves garlic, minced
1 T. ginger, grated
1 onion, diced
3 stalks celery, diced
2 carrots, julienned
2 c. shredded cabbage
1 c. bean sprouts

Directions:
Directions:
1. Preheat oven to 375 degrees. Coat a baking dish with nonstick spray.

2. Cut squash in half lengthwise from step to tail and scrape out seeds.

3. Place squash cut side down onto the baking dish. Place in oven and roast until tender, about 45 minutes.

4. Remove from oven and let rest until cool enough to handle.

5. Using a fork, scrape the flesh to create long strands.

6. In a small bowl, whisk together soy sauce garlic and ginger.

7. Heat a large skillet over medium high heat. Add onion, celery and carrots. Cook, stirring often, until tender. Stir in cabbage and bean sprouts until heated through.

8. Stir in spaghetti squash and soy sauce mixture until well combined.

9. Serve immediately.
