2 boneless, skinless chicken breast halves (pounded slightly thin)
1/2 tsp. garlic salt
2 tsp. dried Italian seasoning, divided
1/4 tsp. black pepper
2 tbsp. pesto sauce
1 cup fresh baby spinach
2 tbsp. chopped sun-dried tomatoes
2 pieces of fontina or provolone cheese
1/2 package (17.5oz) frozen puff pastry sheets, (use one sheet) thawed
1 egg
3 tbsp. water

Preheat oven to 375º. Place sprayed foil or parchment paper on a baking sheet. Season chicken on both sides with garlic salt, pepper and 1 tsp. Italian seasoning. Cut the puff pastry sheet in half. Place 1/2 cup of spinach in the center of each puff pastry sheet. Next, place chicken on top of spinach. Spread 1 tbsp. of pesto over chicken breast. Then, layer with sun-dried tomatoes and top with cheese. Fold pastry sheet around chicken, using fingers or fork to seal the seams. Place seam side down on baking sheet. Whisk egg and water together. Brush a little on each puff pastry bundle. Sprinkle with an extra tsp. of Italian seasoning. Bake 35-50 minutes.
