2 cups raisins
2 cups water
½ cup sugar
2 Tablespoons flour
Pinch of salt
½ teaspoon vanilla
1 Tablespoon butter
1 Tablespoon lemon juice (or add to taste)
Pie crust

Directions:
Directions:
1. Simmer raisins and water together for 10 minutes.
2. Mix together sugar, flour and salt, gradually stirring into raisins.
3. Blend in vanilla, butter and lemon juice.
4. Cool and pour into pie shell.
5. Bake in 450º oven for 15 minutes.
6. Reduce to 350º and bake 25-30 minutes.

Made for Charles Hook on 10/21/00 on his 86th or 87th birthday! Jasmine and I used to take "Grandpa" Charles and "Grandma" Phyllis Hook a meal every Saturday for many months in their mobile home. What a joy!
