Cashew “sour cream”:
1 c. raw cashews
1/4 c. cold water
2 t. Braggs apple cider vinegar
1 T. fresh squeezed lemon juice
1/4 t. kosher salt

Dip:
1/2 onion, small dice
2 T. olive oil
1 T. chives, chopped
2 T. parsley, chopped
1/4 t. garlic powder

Directions:
Directions:
For the sour cream: boil enough water to cover the cashews in a small saucepan, add the cashews and cook until softened-about 15-30 minutes. Drain and rinse well. Place the softened cashews in a food processor with 1/4 cup cold water, vinegar, lemon juice, and salt. Pulse until smooth and creamy, then transfer to a small bowl.

Sauté the onions in olive oil until caramelized, then take them off the flame to cool. Once cool, mix the carmelized onions, chives, parsley, and garlic powder into the sour cream mixture.

Serve with crudités, pita chips, or anything you have the desire to dip!
