2 Large fresh mushrooms
½ cucumber with peel
2 stalks celery
½ Green Pepper
¼ c. red onion

Directions:
Directions:
Chop all vegetables very fine - You can add any other vegetables you want.
Combine 1 Tsp olive oil with 2 TBSP apple cider vinegar and pour over chopped vegetables. Season with Sea salt and pepper.
Yield: about 2 cups. These vegetables and dressing have about 100 calories, less if you find a lower calorie dressing.
