3/4 cup aromatics (yellow onion, shallot, garlic, carrot), diced
2 tbsp olive oil or butter
1/2 tsp cumin
1 cup Basmati or Jasmine rice
1½ cup chicken broth
Salt and black pepper
Splash white wine
2 tbsp fresh parsley
1/3 cup toasted walnuts or pecans

Directions:
Directions:
Melt 2 tbsp of butter/heat oil in a medium saucepan.
Saute 3/4 cup of your aromatics until soft.
Season with salt and pepper.
Add the cumin and cook for 30 seconds.
Add one cup of the rice and cook about 3 minutes to coat and toast rice.
Add 1½ cups chicken broth, a splash of white wine.
Season with salt and pepper.
Cover, bring to a boil, return to a simmer for 12-15 minutes.
Remove from heat, cover saucepan with towel then cover with lid for about 5 minutes.
Fold in the parsley and nuts.
