1 C. Oil
2 C. sugar
3 eggs
1 T. vanilla
3 C. flour
1/2 tsp. baking powder
1 tsp. salt
1 T. cinnamon
1 tsp. soda
3/4 tsp. nutmeg
3 zucchini, pared - enough for 2 cups, grated
1 cup chopped nuts

Directions:
Directions:
Blend oil, sugar, eggs and vanilla.
Sift together flour, baking powder, salt, cinnamon, soda and nutmeg.
Fold grated zucchini into flour mixture. Then stir into oil mixture. Add chopped nuts. Divide into 2 greased loaf pans. Bake one hour at 350º. Freeze or glaze.
