Ingredients for cupcakes:
2 cups flour
1 teaspoon salt
1 teaspoon baking powder
1 cup oil
1 cup milk
2 eggs
1 teaspoon vanilla
2 teaspoons baking soda
2 cups sugar
¾ cup cocoa
1 cup coffee

Ingredients for filling:
¾ cup scalded milk, cooled
1 cup sugar
1 egg white
½ cup Crisco
½ cup butter

Ingredients for icing:
⅓ cup butter
6 Tablespoons milk
1-½ cups sugar
6-ounce packet of chocolate chips

Directions for cupcakes:
1. Mix dry ingredients.
2. Add and mix oil, coffee and milk.
3. Add and mix eggs and vanilla.
4. Pour cupcakes into muffin tins.
5. Bake at 325º for 25-30 minutes.

Directions for filling:
1. Scald milk. (Put milk in heavy-bottomed pan on medium heat. Stir frequently while you wait for it to heat just to the boiling point. It is close when bubbles start to form around the outside edges of the pan. Remove from the heat and let it cool to about 110º.)
2. Cream butter and shortening.
3. Add sugar and cream together.
4. Add egg white and vanilla.
5. Beat till smooth.
6. Add milk, ½ teaspoon at a time. Beat. (Be sure not to add more than ½ teaspoon at a time.
7. Insert into baked cupcakes using a piping tip or similar device.

Directions for icing:
1. Boil butter, milk and sugar for 1 minute.
2. Remove from heat.
3. Add chocolate chips.
4. Stir until smooth and spread on cupcakes.

2004 Laura Heigh made these at a family gathering, and, boy, are they good! I even bought a special contraption from Pampered Chef so I could efficiently insert the filling into the cupcake. They are quite a labor of love, though!
