12 to 15 Large Mushrooms
2 T. Butter
1/4 Lb. Italian Sausage (hot or mild)- ground
1 Medium Onion, chopped finely
2 Cloves garlic, minced
1/2 cup Pork Rinds- crushed (can use Ritz crackers)
1/4 C. Parmesan Cheese- grated
1/4 C. Blue Cheese
1/4 C. Mozzarella Cheese
1/4 C. Gorgonzola
1 tablespoon chopped parsley
1/3 cup chicken broth
Salt and pepper

Preheat oven to 325º

Wash mushrooms and remove stems. Finely chop stems and reserve.

In a large skillet, melt butter and cook sausage until brown.
Add onion, garlic and chopped mushroom stems to skillet and cook until tender but not brown. Allow to cool down.

In a separate bowl add pork rinds, parmesan, parsley, salt, oregano and a dash of pepper, and mix well then add the meat mixture.

Spoon mixture into mushroom caps. Any leftover mixture can be refrigerated or frozen for another batch.

In a shallow baking pan with 1/4-inch water covering bottom of pan, place stuffed mushrooms.
Bake uncovered about 25 minutes until heated thoroughly.
