1 Cup Vegetable or canola oil
1 Cup Flour
2 Cups Yellow onion, chopped
1 Cup Celery, chopped
1 Cup Red or green bell pepper, chopped
1 Pound Smoked sausage, halved and cut into half-inch pieces
¾ Pound Andouille sausage, halved and cut into half-inch pieces
1½ Pounds Boneless, skinless chicken thighs, half-inch diced
2 Quarts Unsalted chicken stock
2 Bay leaves
1½ Tablespoons Cajun seasoning (See Miscellaneous for recipe)
1 Teaspoon Sea salt
1½ Tablespoons File powder
½ Bag Frozen cut okra

Directions:

In a large pot, combine the oil and flour to form a roux and cook over medium-low heat for about 25 minutes, stirring constantly, until the mixture resembles melted chocolate. Add the onion, celery, pepper and salt. Cook for 5 minutes until the vegetables begin to soften.

Add both sausages, chicken, and Cajun seasoning. Cook until the chicken is browned, about 5 minutes. Add the chicken stock and bay leaves.

Bring to a boil, reduce to simmer, cover and cook for 1 hour. Remove the bay leaves. Add the file powder and okra. Cook for an additional 15 minutes. Check the seasoning and add salt or Cajun seasoning to your taste.

The roux is the most important part of this recipe to get authentic flavor. It must be stirred constantly in the beginning or it will burn. Cut all your vegetables and meats prior to starting your roux because you will not have time to do it while you are cooking.
