1 Teaspoon Olive oil, divided
5 Baby Peppers, sliced (about one cup)
½ Teaspoon Garlic, minced
½ Teaspoon Dried oregano
3 Kalamata olives, quartered
Pinch of salt (optional)
½ Cup Hot, cooked orzo
¼ Teaspoon Lemon zest
½ Teaspoon Lemon juice
2 Tablespoons Tzatziki (See Sauces and Dressings section for recipe)
4 Ounces Cooked, skinless chicken breast

Directions:
Directions:
Heat ½ teaspoon oil in a non-stick skillet over medium-high heat. Add peppers, garlic, and oregano: cook, stirring occasionally, until peppers are tender, about five minutes. Stir in olives and salt.

Toss hot orzo with lemon zest, lemon juice, and remaining oil.
Spoon tzatziki over chicken; serve with orzo and peppers. Garnish with lemon if desired.
