Chicken Tortilla soup Recipe

1 whole cut up chicken or equivalent in breast meat
1 medium onion
1 small can green chili peppers
1 large can diced tomatoes
Carrots
Celery
1 can corn
1 packet low sodium taco seasoning
Chicken broth or bouillon
1 package flour tortilla

Directions:
Directions:
Add chicken to large pot. Fill with water/bouillon or broth till chicken is submerged. Dice onion and add to the pot.
Bring to a boil, then reduce to a simmer for 1 hour.
While chicken is simmering cut up carrots and celery into 1/2" slices.
Remove chicken set aside to cool, add carrots, celery , tomatoes, chilies taco seasoning, and corn to the pot.
Once chicken has cooled debone and dice into 1/2" cubes.
Return chicken to pot.
Simmer till vegetables are tender. Season to taste.
Spray tortillas with pam or lightly coat with olive oil. Lightly season with season salt and garlic powder. Cut into 1/4" strips then bake in preheated oven or toaster till lightly browned about 10 mins.

Put soup in bowl, add handful of tortilla, top with shredded cheese and a dab of sour cream. Eat...
Alternative to the tortillas is to use fritos.
