2 Cups Boiling water
2 Cups Diced potatoes
½ Cup Sliced carrots
½ Cup Sliced celery
¼ Cup Chopped onion
½ Teaspoon Salt
¼ Teaspoon Pepper
¼ Teaspoon Thyme
1 Cup Sharp cheddar cheese (grated)
17 Ounce Can cream-style corn
8¾ Ounce Can cream-style corn

White Sauce

¼ Cup Butter
¼ Cup Flour
1 Cup Milk

Directions:
Directions:
In a large pot, cook potatoes, carrots, celery, onion, salt, pepper and thyme in boiling water for about 20 minutes. Do not drain off liquid.

Add cheddar cheese and creamed corn and stir well.

In another pan over medium heat, melt butter and add flour. Stir about one minute, being careful not to brown the roux. Add all the milk at once, stirring constantly. Cook until sauce thickens.

Add white sauce to above mixture slowly while stirring. Simmer over low heat to heat through (do not boil).
