1 Tbsp. Sugar
1 Tbsp. Ground cinnamon
1 cup Shortening
1 ½ cups Sugar
2 large Eggs
1 tsp. Vanilla extract
2 ¾ cups Flour
1 tsp. Baking soda
½ tsp. Salt
2 tsp. Cream of tartar

Combine 1 Tbsp sugar and cinnamon in a small mixing bowl. In a separate bowl, cream shortening: gradually add 1 ½ cups sugar, beating well. Add eggs beating well after each addition. Stir in vanilla. Sift together flour, baking soda, salt and cream of tartar in a medium mixing bowl. Add to creamed mixture, mixing well. Shape dough into 1 inch balls and roll in reserved cinnamon mixture. Place 2 inches apart on a lightly greased cookie sheet. Bake at 400 for 6 minutes or until lightly browned. Remove to wire racks to cool.
