2 pounds russet potatoes
1 large egg, lightly beaten with 1 tablespoon of extra-virgin olive oil
2 teaspoons salt, plus 1 tablespoon for water
3/4 cup flour, more as needed

Directions:
Directions:
Poke potatoes with a paring knife and place in a 400º oven until soft (35-40 minutes).
Peel potatoes while still warm, mash with a fork.
Once cooled, place in a large bowl and add egg and salt.
Stir with fork, then add flour.
Knead just until it forms into dough that is no longer sticky.
Cut into eight pieces, rolling out each piece into a log about an inch thick.
Cut into one-inch pieces.
Boil in batches in salted water for 90 seconds.
Add preferred sauce and serve with freshly grated Parmesan cheese.
