2 C crushed pineapple, drained
1 lemon
1 C sugar
1 pkg gelatin
½ C water
1 C cheddar cheese, grated
½ C chopped nuts
1½ C whipping cream or Cool Whip

Directions:
Directions:
• Soak gelatin in ½ C cold water for 10 minutes.
• Heat pineapple and juice of one lemon in pan.
• Stir in sugar.
• Add gelatin to hot mixture after soaking it.
• Set the mixture aside to cool.
• When the mixture starts to gel, add cheese and pecans.
• Fold in whipping cream and chill till set.

This recipe was given to me by Rick's maternal grandmother, Oleta McCombie. (Don's great grandmother.) She lived in a tiny house in Oklahoma. When we went to see her when Rick and I were dating I slept in the bed in the tiny screened in back porch. The house did not have closets; every bedroom had a "wardrobe" piece of furniture. She was a very sweet lady who loved God and was the one who told Rick about Jesus when he was a little boy. I loved going to see her.
