1 tbsp. Light Brown Sugar, tightly packed
¼ tsp. Salt
4 tbsp. Butter, melted

Preheat oven to 350º. Put the oat cookie, brown sugar, and salt in a food processor and pulse until cookie is broken down into a wet sand. Transfer crumbs to bowl, add butter and knead butter and cookie until moist enough to form into ball. Divide crust evenly between 2 10 in. pie pans. Using hands press cookie crust firmly into each pie pan, making sure bottom and sides are evenly covered. Put both pie shells on a sheet pan and divide filling evenly between the two pans. Filling should fill them 3 quarters of the way full. Bake 15 minutes only. Then open the oven door and reduce the oven to 325º. Keep pies in the oven and once oven is at 325º close the door and bake for another 5 minutes. Pie should be jiggly in the middle, but not alone the edges, if pie is too jiggle, bake for another 5 minutes. Take pies out of the oven and transfer to a cooling rack to cool at room temperature. Then freeze pies for at least 3 hours or overnight. Pies will last 5 days in plastic wrap in fridge or 1 month in the freezer.
Serve pie cold, dusted with confectioner's sugar.
