3 egg yolks
⅔ c. sugar
⅔ c. water
1 T. cornstarch
½ tsp. mustard
⅓ c. vinegar
salt to taste

Directions:
Mix egg, mustard, sugar, vinegar and water. Cook over low heat adding cornstarch dissolved in a little water. Cook, stirring constantly, until thick. When cool add mayonaise to suit.

This was the dressing of choice for my grandmother, Eva Wachtel, and my aunt Mary. My cousin Diana still uses it. This was Grandma's version of Miracle Whip. My mom liked the uncooked version which I have included in the potato salad recipe. I like them both.
