1/2 Stick of Butter
2 tbsp. Olive Oil
2 lbs. Sirloin Roast
1½ c. Carrots
1½ c. Celery
2 Shallots
1 tsp. Dijon Mustard
3- 17.03 oz. Frozen Puff Pastry
1 tbsp. Chopped Parsley
1 large Egg
3 cloves Garlic, minced
3 tbsp. All Purpose Flour
1 tbsp. Mushrooms
1/2 c. Red Wine
1/2 can Beef Broth
Salt and Pepper to taste
2 Bay Leaves
2 sprigs Fresh Thyme
4 strips Cooked Bacon

Melt the butter with the Olive Oil in a heavy sauce pan. Sear the meat over med.- high heat on both sides until brown (about five minutes). Remove to a plate.
Add the Carrots, Celery, and Shallots, then sauté until the vegetables start to wilt (about five mins.). Reduce to med.- low heat, add the garlic, and 1 tsp. Flour and sauté for one minute. Add the Mushrooms and cook for two minutes. Pour in the Wine, Beef Broth, and one c. of Water. Add salt and Pepper to taste. Bring to a boil. Return the browned meat to the pot and reduce heat to low. Add the Bay Leaves and Thyme Sprigs, cover and simmer for thirty to forty-five mins. After forty-five mins., mix the remaining 2 tbsp. of Flour with a little Water and pour into the Stew. Cook and thicken for ten more mins. Remove from heat and set aside to completely cool. Pre-heat oven to 425º. On a lightly floured work space, roll out the Puff pastry sheets one by one to get rid of the creases. Cover the bottom of the baking dish with Puffed Pastry and fill with cooked beef mixture and top with more Pastry. Mix together 1 Egg and 1 tbsp. Water to create egg wash and coat the top of pie. Put in the oven and bake for twenty to twenty five minutes.

This Pot Pie is a little more labor intensive than others, but the reward far outweighs the effort. Perfect dish to warm your family.
