½ c butter softened
1 ⅓ c sugar
3 eggs
1 ½ c flour
½ tsp salt
⅛ tsp baking soda
½ c sour cream
1 c shredded zucchini
1 Tbsp Lemon zest
2 tsp poppy seeds

Directions:
Directions:
Preheat oven to 325º. Beat butter with mixer until creamy. Gradually add sugar beating until light and fluffy. Add eggs one at a time beating just until blended. Stir together flour, salt and baking soda. Add alternately with sour cream. Beat at low speed just until blended. Stir in zucchini, zest and poppy seeds. Spoon batter into 3 greased 3x5 aluminum loaf pans. Bake for 40-45 minutes or until wooden pick comes out clean. Cool in pans on wire rack 10 min. Remove from pans and cool completely on wire racks.
