1 c. flour
2 c. panko bread crumbs
½ c. grated Parmesan cheese
2 medium zucchinis sliced ⅛ to ¼ inch thick
3 eggs, beaten
1 tsp. dried oregano
Salt and pepper

Directions:
Directions:
Place zucchini slices on dry paper towel and sprinkle with salt on both sides. Cover with another paper towel and leave for 20 minutes to draw out some of the moisture. Pre-heat oven to 400º. Line baking sheet with parchment paper. In a shallow bowl, combine panko, cheese, oregano, salt, and pepper. Put the flour in another shallow bowl. Put the beaten eggs on a plate. Dredge the zucchini slices in flour, dip into eggs, then dredge in panko mixture, pressing to coat. Place zucchini slices on prepared baking sheet. Bake 20-30 minutes or until golden. Serve with your favorite dip such as ranch or pizza sauce
