1 egg white, from large egg
1 tsp. vanilla extract
2 c. raw almonds
3 tbsp. unsweetened cocoa powder
1/8 tsp. kosher salt
2 tbsp. sugar

Directions:
Directions:
Line a baking sheet with nonstick foil. In a large bowl, beat egg white and vanilla until frothy. Add almonds to the bowl and toss to thoroughly coat. In a separate bowl, combine cocoa powder, kosher salt and sugar. Sprinkle over the almonds and toss to coat completely. Spread the almonds in an even layer on the baking sheet and bake at 275º for 25 minutes on the middle oven rack. Using a spatula, flip the almonds over in small batches and bake 15 minutes more.
