4 T. olive oil
1/4 c. all-purpose flour
1/4 tsp. freshly ground pepper
1 tsp. salt
4 fillets of flounder or other white fish

6 T. butter
2 tsp. minced shallot
1/4 c. chicken broth
1/4 c. fresh lemon juice
2 T. chopped sun-dried tomatoes
2 T. capers, drained and rinsed

1 T. fresh chives for garnish

Directions:

Heat oven to 200ºF. Combine flour, pepper and salt; dredge fish fillets in mixture and set aside.

Heat olive oil in 12-in. skillet over high heat. Cook fillets (two at a time, 2 min. per side) until golden brown. Transfer to serving platter and keep warm in oven.

Discard oil; reduce heat to medium. Melt butter in skillet. Add shallot and cook until tender, 2 min. Add remaining ingredients except chives; increase heat to high, bring to boil and cook until thickened, 2 to 3 min.

Top fish with sauce. Sprinkle with chives; serve immediately.

Actually created by a chef at a Sedona AZ restaurant; unfortunately that restaurant is no longer there so I wanted to add the recipe to my collection as it is a really good way to serve white fish.
