4 lbs baby potatoes
2 cups corn
1⁄2 red onion, diced
4-5 garlic cloves
1⁄2 lb bacon, crumbled
1⁄3 cup parmesan cheese
1⁄3 cup sour cream
1⁄3 cup mayonnaise
1 teaspoon or more horseradish
2 tablespoons or more lemon juice
1 tablespoon or more dill
salt
fresh pepper
olive oil

Directions:
Directions:
Toss bite sized baby potatos, corn, and onion in olive oil and salt and pepper. Spread evenly on a cookie sheet. Peel garlic and add to mixture. Bake at 425º for approximately 20 minutes or until potatoes are cooked through. Cook and crumble the bacon. For the dressing, mix together cheese, sour cream, mayonnaise, horseradish, lemon juice and dill. Smash the roasted garlic into the dressing mixture. Mix all together and serve warm.
