1 package active dry yeast
¼ cup warm water
1 egg
¾ cup milk
3 tablespoon sugar
1 teaspoon salt
3¼ to 3½ all-purpose flour

Raisin filling:
1 teaspoon ground cardamom
¼ cup butter, softened
2 cups confectioners' sugar
2 tablespoons heavy cream
1 cup seedless raisins or chopped dried fruit

Part One: Cream ¾ butter with ¼ cup flour; pat or roll mixture between 2 sheets of wax paper to a 10x4-inch rectangle. Chill thoroughly.

Part Two: Soften yeast in ¼ cup warm water. Beat 1 egg; add ¾ cup milk, 3 tablespoons sugar, 1 teaspoon salt and softened yeast; mix well.

Stir in 3 to 3¼ cups flour for soft dough. On a floured surface, roll into a 12-inch square.

Place chilled butter mixture (Part 1) in center of dough (Part 2) and bring sides over butter mixture to overlap. Turn dough ¼-way around and roll to 12-inch square. Repeat folding and rolling twice more. Wrap in wax paper. Chill 30 minutes. Roll to 24x12-inch rectangle.

Cut lengthwise in 2 strips. Spread each with raisin filling. Roll as for jelly roll. Moisten edges and seal. Stretch to 30-inch length without breaking dough. Place each roll seam side down on greased baking sheet, shaping into circle. Flatten to ½-inch with rolling pin. Brush rolls with beaten egg; sprinkle with ¼ cup sugar. Cover with wax paper and a damp cloth.

Let rise till almost double, about 25 minutes. Bake in 375º oven 25 to 30 minutes, or until golden brown
