2 c. gluten-free all-purpose baking flour
1 tsp. baking soda
¼ tsp. salt
4 eggs
2.5 c. (generous) mashed ripe bananas (6-7 medium)
1 c. sugar
½ c. unsweetened applesauce
⅓ c. canola oil
1 tsp. vanilla extract
2 - 2½ tsp. cinnamon (optional)
½ c. chopped walnuts (optional)

Directions:

In a large bowl, combine the flour, baking soda and salt (and cinnamon if including).

In a small bowl, whisk the eggs, bananas, sugar, apple sauce, oil and vanilla. Stir into dry ingredients until moistened.

Pour into two 8" x 4" loaf pans coated with cooking spray.

Sprinkle with walnuts (optional).

Bake at 350ºC for 45-55 minutes or until a toothpick inserted near the centre comes out clean.

Cool for 10 minutes before removing from pans to wire racks.
