3 tbs flour
1 stick of butter
1 and 1/2 yellow or white onion chopped
1 gal milk
1 qt oyster water
1 dozen oysters (or more)
1 tbs parsley
1/2 cup green onion
salt and pepper to taste

Directions:
Directions:
First you make a roux...

In large pot brown flour in butter til it's a caramel color
Add onions and stir til translucent and soft
Add oyster liquid and oysters
Cook til oysters curl a little bit
Add pre-warmed milk
Bring to a gentle boil
Add green onion and parsley
Add salt and pepper
Simmer low for two minutes then serve. (Oysters can overcook if left for more the two minutes)
