2 ¾ cups flour 1 cup water
2 eggs 1 TBSP oil
Pinch of salt

Directions:
Directions:
Prepare dough by mixing the flour, eggs and salt together. While stirring, add water a little at a time until dough is smooth but not stiff. (If large eggs are used, use less water). Continue to beat dough until it rises. To cook the dough, heat a large pot of salt water to boiling and add oil. Fill the grater with part of the dough and grate noodles into the boiling water. After 2-3 minutes, use a ladle or skimmer to lift out cooked noodles. Repeat with remainder of the dough. I put a little butter and parsley in and then serve. Serves 4.
