4 Lamb Chops (3/4" thick)
3/4 tsp. Rosemary
1/4 tsp. Basil
1/2 tsp. Thyme
Salt
Pepper
Olive Oil


1/4 Cup Shallots (minced)
1/2 Cup good Balsamic Vinegar
3/4 Cup Chicken Broth
1 Tbsp. Butter

Directions:

Rub herbs on lamb chops, cover and set aside for approx. 15 minutes

On medium heat, in large skillet, add olive oil.

Cook lamb chops until desired doneness (about 3-1/2 minutes on each side for medium rare)
Set aside

On medium-high heat, add shallots to pan until brown, add balsamic vinegar and chicken broth. Stir until reduced to 1/2 (about 5 minutes)

Add butter, stir and pour over lamb chops
