2 c white sugar
1½ c cooking oil
2 eggs
2 tsp vanilla
3 c fresh apples, diced
3 c flour
1 tsp baking soda
1 tsp cinnamon
1 c nuts, chopped (optional)
Directions:
Directions:
1. Preheat oven to 350º.
2. Mix well sugar, oil, eggs, vanilla and apples.
3. Add flour, baking soda and cinnamon; mix well.
4. Add chopped nuts, if desired.
5. Bake for 35-40 minutes in a greased, 10x12 pan.

Serve with ice cream or whipped topping!
