1 lb. fresh mushrooms, sliced
1 c. white vinegar
2 c. water
½ c. each sliced carrots, sliced celery, green pepper strips, sweet red pepper strips
⅓ c. olive oil
1 tsp. salt
1 T. minced garlic
¼ tsp. black pepper

Directions:
Directions:
In a medium saucepan combine mushrooms and vinegar; bring to a boil, reduce heat to simmer and cook for 2 minutes. Drain and set aside to cool.

Bring water to a boil in a small saucepan and blanch veggies for about 3 to 5 minutes.

Mix remaining ingredients to make a dressing. Pour over mushroom & vegetable mixture and toss to coat. Cover and refrigerate at least 2 hours.
