1 c. flour
1½ baking powder
½ tsp. salt
2½ T. vegetable oil
¼ c. milk
1 egg

Directions:
Directions:
Combine dry ingredients in bowl. Whisk oil, milk, and egg in separate bowl. Add liquid mixture to dry mixture and stir just until soft dough forms. Pat out dough on floured board to about ⅓ inch thick. Cut into round or square 1 inch pieces. Drop into simmering broth and cook until the dumplings puff up and are cooked through, about 5 minutes.

After my mom passed Dad always complained he couldn't find her recipe for dumplings. This one was as close as I could come (I don't think she really had a recipe) and he begrudgingly agreed it was close. As close to a compliment as you'd ever get!
