½ onion, chopped
2-3 c. chopped carrots
3 ribs celery, chopped
4-5 lg. potatoes, chopped
5 c. veggie broth (or 5. c. chicken broth)
1 c. butter
1 c. flour
2 c. half & half (OR 1 c. cream & 1 c. milk)
4 c. grated cheddar cheese
½ tsp. Tabasco Sauce (optional)

Directions:
Directions:
In a large pot cook vegetables until tender. Drain cooked veggies reserving 5 cups broth and set both aside. Melt 1 cup butter in pot, add 1 cup flour. Cook and stir for 1 min. Add broth, stir until thickened. Reduce heat to low. Add half & half OR cream/milk. Stir til thickened. Remove from heat and add grated cheddar cheese. Add cooked veggies and Tabasco Sauce (optional).
