2 c. unbleached flour
4 tsp. baking powder
3 T. sugar (I use super fine)
½ tsp. salt
½ tsp. cream of tartar
1 stick butter, very cold and cut into small chunks or frozen and then grated
¾ c. milk at room temperature

Directions:
Combine flour, baking powder, sugar, salt, and cream of tartar in a medium bowl. Cut in butter until mixture resembles medium peas, or if using grated butter just stir it in. Add milk and mix until just blended. Do not overmix. Turn onto lightly floured surface and pat to ¾ to 1 inch thickness. Cut with biscuit cutter or glass dipped in flour. Place on ungreased baking sheet. Bake at 450º for 10 minutes until just golden brown.

Believe it or not this is really a recipe written out in my dad's (Jim Friday) hand. It does make really good biscuits.
I have found that making the dough in the food processor prevents over-mixing. And definitely "pat" the dough out gently with your fingertips (rolling it compresses it too much). I like soft sides so I place the biscuits just touching each other, if you place them about 1 inch apart the sides will be crusty, your choice.
You can also make the dough, cut out the biscuits, and freeze them for future use. Just bake them from frozen at 450 for about 20 minutes.
