1 - 9 inch baked pie shell
3 cups milk
¾ cup sugar
5 tablespoons cornstarch
½ tsp. salt
3 egg yolks, beaten
1½ cups shredded coconut
2 tablespoons butter
1½ tsp. vanilla

Directions:
Directions:
1. Bake pie shell, as desired. Set aside. I use a graham cracker crust.

2. Place milk in 4-cup glass measure. Heat in Microwave Oven on Cookmatic Level 8 for 5 to 6 minutes. or until scalded.

3. Mix together sugar, cornstarch and salt in 2 quart glass measure. Stir hot milk slowly into mixture.

4. Stir about ¾ cup of hot measure into egg yolks, stirring constantly. Return egg mixture to 2 quart glass measure.

5. Cook in Microwave Oven on Cookmatic Level 8 for 3 to 4 minutes, or until thickened. Stir with wire whip often during cooking. Add coconut, butter, and vanilla. Stir until butter is melted. Pour filling into pie shell. Chill several hours before serving. (It takes great warm also)

6. Cool Whip for a topping.
