2 chicken breasts
4 oz. (approx.) Feta cheese
1 onion
herbs to taste (I like: Clubhouse Greek seasoning)
2 - 3 tomatoes
mushrooms to taste

Serves 2 (double if you have more)
Slice chicken lengthwise. Cut cheese into two thin flat pieces and lay on top of one half of chicken breasts then lay the other half of the chicken breast on top (like a sandwich). Chop onion, add herbs (plus salt and pepper) and mix with 1 dessert spoon of olive oil. Place chicken breasts (with cheese inside) onto a bed of the onion mixture into a greased baking dish. Top with tomatoes and mushrooms. Cook in a 375º oven for about 1 hour or until chicken is cooked through.
