Ingredients: 2 tbsp. lemon juice ½ cup granulated sugar 3 tbsp. all-purpose flour ½ cinnamon 8 - 9 apples (3 Cortland, 3 green Granny Smith and 3 MacIntosh (Spys if no Mac's)) enough pie pastry for 2 shells (homemade is best) I like the Tenderflake recipe)

Directions:1. In large bowl, toss apples with lemon juice. Stir together sugar, flour and cinnamon; sprinkle over apples and toss until coated. Scrape into pie shell. Brush pastry rim with water. 2. Roll out second ball of dough and lay over the apple mixture; overhanging pastry should be trimmed and press edges together with fingers or fork to seal top and bottom shells 3. Whisk yolk of one egg and add 2 tsp. sugar. Brush over crust (top pie shell). 4. Bake in bottom third of the oven at 425º F. fir 15 minutes then reduce to 350º and bake for 40 more minutes or until golden brown. Let cool on rack. |

Notes: This pie is best made with fresh Fall apples and freezes well. It tends to bubble over in the oven so I usually place a sheet of tin foil on the rack below. This pie is delicious and is one of our boys' favourites.
