-As many tomatoes as you would like to use (I recommend 8-20 or so)
-Salt
-Fresh Ground Black Pepper
-Fresh Garlic
-Fresh Basil
-Red Pepper Flakes (optional)
-Cooking Spray
-Any additional seasonings you'd like to add.

Directions:
Core as many tomatoes as you would like to use and place them on a sprayed cookie sheet with the holes down. Broil for a few minutes until tomatoes begin to wrinkle but not burn. Remove from oven and let cool. Once cooled, pull off and throw away tomato skins, and place the peeled tomatoes in a blender or food processor. Blend (you can also add whole basil leaves and garlic to your liking to the blender). Pour into a large pot and add cracked pepper, salt (you will likely need more of these than you think) and one sprinkling of red pepper flakes (you only need 5 or so flakes, they add heat to the dish as they cook). Let simmer for some time, about 10 minutes minimum or longer if you like. (up to 90 minutes). Shorter cooking times will yield a thinner sauce with a fresher tomato flavor; longer cooking times will thicken your sauce and give it a cooked flavor.

We love eating this with Amy + Andrea's Pizza recipes along with Pasta and especially Ravioli. My Mother in Law taught me while we were living in Pennsylvania.

We love doing this in large batches in the summer with extra tomatoes from the garden, neighbors, or the farmer's market, but I also do it any time we have tomatoes around the house that need to be used up. Freeze extra sauce in doubled baggies.
