1 cup milk
1 cup flour
Dash of salt
Fresh tomatoes

Beat the eggs in a medium mixing bowl. Add milk and stir. Add flour and salt; mix well. Heat and grease cast iron pan. Pour some batter on hot pan and turn pancake over when brown. Serve as pancakes with syrup or a runny jam OR when fresh ripe tomatoes are available, cup pancakes into 1 1/2" squares while still on the pan. Put squares into large bowl. (My family frequently requests cup-up pancakes!)

Cut the tomatoes into 1" cubes in a bowl. Add some sugar and let tomatoes draw its own juice. Refrigerate. Meanwhile, make the cup-up pancakes and put in a covered bowl to keep warm. Add some cream to the cup-up tomatoes. Stir. To serve, put some cup-up pancakes in a cereal bowl, add some cut-up tomatoes and enjoy!
