Ingredients: Marinade: 2 T. red wine vinegar 1 tsp. Dijon mustard 1/8 tsp. each salt and pepper 3 T. olive oil 2 T. lemon juice 1 T. chopped fresh dill
Souvlaki: 1 lb. large shrimp, peeled and deveined, tails removed 12 mini pita breads or 6 regular size ones, warmed 2 c. shredded romaine lettuce 1/2 red onion, chopped 1 c. cherry or grape tomatoes, quartered

Directions:Prepare yogurt sauce and set aside. Combine marinade ingredients and whisk to emulsify. Place shrimp in a resealable plastic bag with 3 T. of the marinade. Shake to coat and set aside for 15 to 30 minutes. Warm the pitas. Spread 2 T. of yogurt sauce on each pita; distribute lettuce, onion, & tomato equally among the pitas. Heat grill, grill pan, or broiler. Remove shrimp from bag and grill about 2 minutes on each side. Divide grilled shrimp among the pitas and drizzle remaining marinade over each. Serve with remaining yogurt sauce on the side for dipping. |

Ingredients: 1 medium peeled & chopped or grated cucumber 1 tsp. salt 1 c. plain Greek yogurt 1 T. olive oil 1 T. lemon juice 2 garlic cloves, minced or grated 1 T. chopped fresh dill

Directions:Squeeze grated cucumber to extract as much juice as possible; discard juice and add squeezed flesh to a bowl with the grated garlic. Add remaining ingredients, mixing well. Cover & chill. |
