12 medium cucumbers
6 large onions
1 stalk celery
2 green peppers
¾ cup salt
1 small cauliflower
1 quart vinegar
3 cups white sugar
1 tbsp. mustard seed
¾ cup dry mustard
2 tsp. turmeric
1½ cups flour

Directions:
Directions:
Put cucumbers, onions, and celery through a mincer. Soak overnight in the salt. In morning add cauliflower (broken into small pieces). Cover with the vinegar, white sugar and mustard seed. Mix well.
Then thicken with the mustard, turmeric, flour. Mix to a smooth paste with water. Stir into relish. Cook, keep stirring until thickened. It does not need to thicken long - about the same amount of time as when you make cream sauce.
